Turkey with Kumquat and Green Tea
Ingredients (6 servings)
- 1 kg turkey breast or silverside beef
- 250gr kumquat (Chinese mandarins)
- a bunch of sage
- 1 teaspoons of Flowery Green Pekoe green Tea
- 150gr sliced bacon
- 20gr butter
- Extra-vergin olive oil
- salt and pepper
Preparation: 30 minutes
Cooking time: 1 hour
1- Mince 100gr kumquat with some sage leaves, getting rid of the kumquat seeds.
Carve lenghtwise the turkey breast; put salt and pepper in the carve, oil it and stuff it with the kumquat minced mixture and the Flowery Green Pekoe Tea.
2- Wrap the meat in slightly overlapping backon slices, then tie it with kitchen twine.
Place it on a baking tray adding the remaining kumquats, some Tea leaves and butter flakes.
3- Cook in hot oven at 170°C for about 1 hour, basting occasionally with some hot broth.
Serve sliced with kumquat and cooking liquid.
Matching Tea: you might serve this dish with some Flowery Green Pekoe Tea.
The flowery notes of this Tea perfectly match the kumquat ones giving the meat a pleasant aromatic taste.
