Mousse with Chocolate and Earl Grey Blue Flower
Ingredients (for 4 servings)
- 3 eggs white
- 30gr sugar
- 100gr black chocolate
- 3dl cream
- 2 teaspoons Earl Grey Blue Flower black Tea
Whip egg white and add to sugar until you get a dense mouse.
Melt chocolate in bain-marie with a little water. (1 or 2 spoons)
Reduce the Tea leaves to a powder and add it to the cream, mixing carefully.
Very carefully mix the cream and the chocolate Tea, finally add the whipped egg white.
You might leave all in a large soup tureen or place it in small single bowls.
Put in a fridge to make the mousse firm.
You can prepare all one evening in advance.
Eventually deco with some candied orange peels.
