Sencha Fukuju Green Tea Bread
- 330gr wholemeal spelt flour
- 50gr sourdough
- 2 teaspoons of Sencha FukujuGreen Tea
- 2 teaspoons of active dry yeast
- 1 glass of water
- 5 full tablespoons of raisins
- 4 tablespoons of lemon juice
- 4 tablespoons of raw sugar cane
- 4 tablespoons of seeds oil
- a pinch of salt
Heat the water with Sencha FukujuGreen Tea , take it to boiling, then switch off and filter. Add the raisins and let it cool down.
Add the sourdough, lemon juice, oil, active dry yeast and sugar.
Leave it rest and after 20 minutes add a pinch of salt. Mix with the flour until you get a homogeneous paste.
Leave rising for about 90 minutes in a hot place.
Give the paste a round shape and let it rest for other 45 minutes.
Cook for about 10 minutes at 180°C; then for 15 minutes at 160°C (possibly in the oven lower part).
