Ingredients (for about 50 biscuits)
- 2 eggs (1 yolk; 1 entire)
- 80gr sugar
- 80gr butter
- 1 lemon vial (or some lemon grated zest)
- 2 spoons of liquor (Rum or Anisette)
- 3 spoons of black chocolate chips
- 300gr of "00" flour
- 1 vanilla baking powder packet
This recipe allows you to prepare in an easy way very nice Tea biscuits. The base is made of shortcrust pastry but lighter as it contains less butter.
Beat the eggs together with sugar, lemon vial and liquor; add melted butter, then flour and baking powder.
Knead thoroughly by hands. Once obtained a firm pastry, devide it in two halves.
Take one half and add to it the black chocolates chips. Roll it out so as to obtain a 0.5cm pastry, and prepare the biscuits with suitable cookie cutters.
You can choose to add some kind of jam to top up the chocolateless half pastry.
Place the biscuits on a buttered baking pan and put it in the oven at 180°C for about 35mins.
